Ryusei NagiA shop favourite! From Hiroshima, where the typical style is soft and pretty, this brewery makes Kimoto sakes with sharpness and structure. Brewed with a local rice called Hattan 35, there is also no yeast added (ambient yeast only). The lactic fermentation gives a nice rich texture with some wildness on the palate, balanced with pretty Asian pear notes. So good!
